PhD Thesis “Impact of processing conditions on functional properties of milk protein concentrates”

24.02.2020, Wissenschaftliches Personal

The research group “Fluid Dynamics of Complex Biosystems” headed by Prof. Dr. Natalie Germann has an open PhD position in the field of experimental rheology.

About us

The research of Professor Germann’s fluid dynamics group focuses on the thermomechanical and functional properties of materials being of industrial relevance. The ultimate aim is to design and improve industrial processes by establishing a thorough understanding of the materials at different length- and time scales. Your project

Milk protein concentrates (MPC) are dairy proteins which are isolated from skim milk through membrane separation. In industrial applications, they are utilized as ingredients in powder form. MPC powders hare rich in protein and low in lactose and minerals. In addition, they have enhanced nutritional, sensory, and functional properties. A great product variability is expected due to missing standards. A systematic comparison of freshly produced and reconstituted MPC will be conducted to understand the impacts of various factors on MPC properties and to provide manufacturing guidelines. The project is funded by the German Research Foundation and in collaboration with Prof. Kulozik’s chair of Food and Bioprocess Engineering.

Your profile

We are looking for a talented individual who is excited about academic research. He/she should be able to work independently as well as to cooperate with an interdisciplinary team of researchers. Applicants should hold a Master degree in food technology, chemical engineering, material science or a related field. He/she should have a solid background in experimental rheology and microstrcutural characterization. Laboratory work and practical applications will be an essential part of the project. Good communication skills and fluency in both written and spoken English are required. Professional German language skills are expected since the candidate should be able to actively participate in the teaching activities of the FDCB group.
