The research group “Fluid Dynamics of Complex Biosystems” headed by Prof. Dr. Natalie Germann has an open postdoctoral position in the field of experimental rheology.
Your project
Convenience food is a growing market worldwide and the demand of natural preservation methods is high. In this project, we will develop a new saying mass for meat products such as sausages. The spraying mass will consist of gelatine and alginate beads filled with essential oils. Different emulsification processes (microfluidics, rotor-stator system) will be tested. After spraying the heated micro emulation upon the product surface in a cooled from, a firm gel enclosing the product surface is formed. Another important aspect of this study is the influence of various factors such as the droplet size on the stability on the gel film, the sensory properties and the shelf life of the product. The project is in collaboration with the industrial partner Reinert GmbH.
Your profile
We are looking for a talented individual who is excited about academic research. He/she should be able to work independently as well as to cooperate with an interdisciplinary team of researchers. You hold a PhD degree in food technology, chemical engineering, material science or a related field. You have expertise in experimental rheology, are interested in working with students, and are willing to help with the acquisition of third party money. Good communication skills and fluency in both written and spoken English are required. Professional German language skills are a plus.

The position can be filled immediately and is initially limited to the total duration of the project (two years).. Continuation of the appointment beyond this period of time is intended.
